Sunday Funday!

The hubster had to work today so I was up at the crack of dawn when his alarm went off at 6 am.....I couldn't fall back asleep when he left so I crawled out of bed and enjoyed a some coffee and eggs in my office. I absolutely adore my office! It is my favorite place to enjoy my morning coffee and check my e-mails and read blogs.


I was up so early, so I decided to get a start on my day. By 9 I hit the treadmill and ran two miles while enjoying the Jersey Shore. I can run and run when I am watching Snookie's shenanigans! 


Once I showered I was off. My mom and I hit the mall in search of a dress for this weekend. I am in my friends Sara and Rob's wedding and I needed something to wear to their rehearsal dinner. The Limited was having a buy one get one sale AND I had a $25 off coupon! After trying on ever dress in the store I fell in love with this one....


I can't pass up a dress with pockets! I also got a pair of dress pants for FREE! 


After the mall I had to do my weekly grocery shopping trip, there I bought the ingredients to make pumpkin chocolate chip muffins. I found the recipe at Gina's Skinny Taste. I did adapt it a bit. I did not have any pumpkin pie spice, so I just used cinnamon. Also, the hubby doesn't like cream cheese so I nixed the icing, and decided to add in some chocolate chips instead. Since I am not icing these babies, I am calling them muffins instead of cupcakes. 


I love cake batter and cookie dough, so I couldn't resist taste testing it, and if the muffins taste half as good as the batter, we are in for a treat!
I baked them for 17 minutes, and the smell that filled my house was amazing!
The recipe made 15 muffins for the hubby and I to enjoy this week. I do not bake, I actually HATE baking, so what I loved most about this recipe is that it is super easy to make AND low in fat and calories. 
Not only will I get my chocolate fix, I am enjoying my first pumpkin treat of the season. I plan on making these to share with my family for Thanksgiving! Guess I better stock up on pumpkin before I can't find it in stores....
