I think the worst part of his schedule is eating dinner alone. Even though he gets off of work at 7, he goes to the gym and doesn't get home until after 8. There is no way I could wait until that late to eat. My stomach would totally eat itself by then, and it would just be unhealthy for me to eat that late.
Now, I have never been much of a cook. My mom is the best cook I know, so growing up she took care of all of our family dinners and never really learned how to cook for myself. Even in college my dinners typically consisted of a frozen entree. Being a newly wed I really want to make healthy delicious meals for my husband and myself so I like trying new things. For my solo dinner tonight I tried one of my new recipes and I made some awesome chicken!
Meet Garlic-Rosemary Chicken! It was super easy to make!! I did make a few revisions to the recipe that I used.
First, I used my own measurements of the ingredients. I pretty much know mine and my hubby's tastes, so I added one more clove of garlic and mixed it with the lemon juice and let the chicken marinate in it for about 45 minutes before I topped it with pepper and the rosemary. Also, when it was done I topped my piece was parmigiana cheese.
Parm cheese is my new obsession! I read in an old Women's Health magazine that women in their 20s should be eating more of it, ever since I sneak it into any recipe I can!
I had some Uncle Ben's brown rice with my chicken, and it was the perfect pair! On the side I also had a spinach salad. My mom had introduced me to the best salad dressing. I am in love with it!
You can purchase the dressing online, from Chief Tim. It is a sweet balsamic, and it is so good I think I could drink it from the bottle!
And all though, I was eating dinner alone, it made me happy knowing that I can actually make a good meal! I am really proud of myself for not just succeeding at making a meal but also trying something new. Now, the true test will be if Mr. Picky Pants likes it! Wish me luck!

ReplyDeletehaha good question! He said it was good, but his tone suggested otherwise....but he did say he would eat it again, unlike the beef stew I made on Wednesday hahaha
