Perfect Pasta!

Mondays are my longest day of the week because I tutor for an hour after school.
The I hit the gym.
Shower.
And finally I can make dinner.

Usually I try to make my dinners quick, simple, and healthy because by the time I am done showering I am staaaarving! Today I decided that I would made spaghetti.

I don't often make pasta for dinner because I try to eat at low carb as possible but this week I was craving some spaghetti sauce.

Growing up, I hated spaghetti. My mom or dad would open up a jar and quickly fix up some spaghetti, and those nights I would go to be hungry. I hated sauce from the jar, it grossed me out and I could always find a chunk of something mixed in it. Due to my hatred of jarred sauce, when I was older my mom began to whip up her own. This completely changed my opinion of spaghetti! My mom's homemade sauce, among many of her recipes, is probably my favorite.

When I moved to Penn State and was living in an apartment and cooking for myself, sauce was something that I knew I needed to learn how to make. Now, I would never use anything but my own mixture and tonight was no different.

Whenever I make pasta, I like to have a protein along with it, so tonight I used tomato basil chicken sausage. I took the casing off and browned it in the pan. When it was done, I added the sauce and made my mixture.

I think this was my best sauce to date! The chicken sausage went perfectly!

I accompanied the sauce with some whole wheat egg noodles.

I surprise myself everyday when I create a new and yummy meal for the hubby and I. I even caught the hubby spooning some of the leftover sauce into his mouth before he cleaned up! I am starting to get use to this wife stuff, and hate to say it, but it's times like this that I really like it.
